Bangkok, 20-22 September – The recently concluded 3-day study intensive on Panettone and Pandoro at The Fully bake story Bangkok, under the patronage of the Thai-Italian Chamber of Commerce (TICC), was an overwhelming success. Held exclusively with Chef Francesco Elmi, President of the Panettone World Championship and renowned founder of Pasticceria Regina di Quadri in Bologna, the event attracted pastry enthusiasts and professionals eager to perfect the art of Italy’s most iconic holiday pastries.
Chef Elmi, an internationally celebrated figure in the pastry world, led participants through a comprehensive exploration of Panettone and Pandoro, sharing his expertise on the mastery of Pasta Madre (Lievito Madre), the traditional Italian mother dough, and various processes critical to authentic Italian baking. His vast experience, including his accolades at HOST 2023 where he was recognized among the world’s best pastry chefs by Maestro Iginio Massari, made him an inspiring guide throughout the event.
Key Highlights:
Hands-On Training: Attendees were provided with expert instruction on producing Classic Panettone, Chocolate Panettone, and innovative variations such as Amarena & Vanilla Chocolate Panettone. Chef Elmi also shared techniques for creating authentic Pandoro and other Italian favorites, like Brioche Limone e Fragola and the celebrated Pan Dei Re.
Glazing Techniques: Participants explored the different types of glazes for Panettone, from almond and hazelnut to sugar-free options, enhancing the diversity of flavors and textures.
Exclusive Knowledge Sharing: In addition to practical demonstrations, Chef Elmi shared his personal experiences as a Global Brand Ambassador and a juror on Italy’s popular Cake Show, giving attendees a unique insider’s perspective on the competitive world of high-end pastry.
